Green Beans with garlic & almonds

2 lbs of fresh or frozen thin whole green beans
rinse well
4-8 galic cloves thinly sliced
2 tbsp olive oil
1 tsp coarse sea salt
(or regular if you don'thave the other)

*if using fresh green beans, follow cooking instructions below, if using grozen, skip to step 2
1. bring a pot of salted water to a boil, add beans, return to a boil reduce heat and simmer covered for 6 min. Drain and rinse under cold water to stop the cooking process, drain again.
2. in a large skillet, cook 1/2 of the garlic in 1 Tbsp hot oil over med-high heat fro 15 seconds. Add hakf the green beans and cook stirring frequently for 2-3 min. season with salt, remove from skillet and toss in slivered slmonds.
3. Repeat the process.

Homemade pizza

Bobolli prepared crust -OR-
Flat out bread for individual pizzas (they come in lots of varieties)
Jar of original pasta sauce
can of diced tomaotes italian style
turkey pepperoni
sliced mushrooms
soy crumbles (Morning Star, found in organic freezer section)
onion, chopped
fresh tomatoes sliced (optional)

combine pasta sauce and tomatoes and blend in blender until tomatoes are finelt chopped (NOT TOO MUCH OF IT WILL BECOME WATERY)
*add additional spices if desired, 1 tsp oregano, 1 tsp basil, 1 stp garlic powder)
spread sauce evenly over crust
add toppings desired
cover with mozzarella cheese, or be different and try without! you'll be amazed how good it is!
Bake a5 425degrees for 8 min.
top with shredded parm. cheese if desired!

Saute Mushrooms

1lb of halved mushrooms
2 Tbsp olive oil
salt
pepper
toss all of the above ingredients together
spread in a shallow baking dish
roast at 425 degrees for 15 min.
sprinkle with fresh oregano or thyme if desired

Chicken in sweet pepper sauce

1-2 lbs of chicken thighs
4 cloves garlic, minced
1 1/2 tsp salt
1 1/4 coarse ground black pepper
1 tsp dried oregano

Preheat oven to 425 degrees
sprinkle garlic over chicken
in small bowl combine salt, pepper, and pregano, sprinkle evenly over the chicken and rub in with your fingers
place chicken in a shallow roasting pan and roast uncovered for 35 min. the loosly cover and let stand for 15 min.

*Use your choice of any brand sweet redpepper dressing as a dipping side for chicken

Pan-fried Steak & Potatoes

12 cloves garlic, peeled & smashed
1 lb potatoes, scrubbed
4- 6oz beef ribeye steaks
2 Tbsp olive oil
1 cup grape tomaotes
fresh oregano (optional)

*to smash garlic, take unpeeled clove, using the side of your knife, smash the clove to pop the peeling.
quatrer potaotes, place in microwave safe bowl, cover with vented plastic wrap & cook on high power for 5 min. stir in garlic, cover and cook 5 more min until tender stiring once. Drain.
heat 1 Tbsp oil in large skillet over med-high heat. Season steaks with salt & pepper. cook steaks half at a time, 8 min. turning once. Keep steaks warm while cooking others.
Add remaining oil to skillet, add potatoes, garlic and tomatoes, season with salt and pepper, cook 5 min or until potatoes are golden and tomatoes begin to wilt, stirring occasionally. serve potatoe mixture with steak and top with fresh oregano if desired.

Zucchini Boats

5 Med zucchinis, halved length wise
3 Tbsp butter spread (we like smart balance light)
1 med onion, chopped
1 red bell pepper, chopped
3 cloves garlic, finely chopped
1/2 tsp dried oregano
1/4 cup shredded parmesan cheese

Preheat oven to 375 dregrees
scoop out pulp from 8 zucchini halves, set aside
arrange zucchini halves on baking sheet.
roughly chop remaining zucchini and pupl
melt butter in a skillet over med-high heat, cook zucchini, onion, galic, and red peppers seasoned with oregano until tender stirring occasionally.
evenly spoon veggie mixture into zucchini halves, top with cheese, bake 30 min.

Greek Spinach Veggie Burgers

1/4 cup olive oil
1 clove garlic minced
1 tsp dried oregano
1 tsp dried dillweed
1 cub herb-seasoned stuffing mix
2 eggs slightly beaten
1 10oz pkg frozed chopped spinach, thawed well and drained
1/2 cup feta cheese crumbles
4 whole wheat hamburger buns or sandwhich thins slightly toasted
Toppers:(optional)
plain FF yougurt
feta cheese crumbles
sliced roasted red peppers
sliced red onion (or any onion)

combine oil, garlic, oregano, dillweed, and 1/4 tsp black pepper. Stir in stuffing mix to coat well. Stir in eggs, spinach, & 1/2 cup feta cheese; mix well. Shape into 4, 1/2"thick patties.
Heat griddle or large skillet to med. heat. Add patties and cook for 3-4 min per side or until browned andheated through.
Serve on buns with sedired toppings.

Tilapia & Veggies

4-2.5oz tilapia Fillets
16 stalks asparagus trimmed
2 cups baby carrots peeled
1/2 tsp garlic herb salt-free seasoning (like Mrs.Dash)
thinly sliced oranges halved
parchment paper
1 TBSP olive oil
1/8 tsp salt

Preheat oven to 400 degrees
Cut 4 12" squares of parchment paper & fold in half
Put 4 asparagus in each packet, 8 carrots & one fillet. Sprinkle with olive oil and seasoning.
Top with orange slices, then fold paper over veggies & fish. Make 2-3 1" folds on the short ends, repeat on the long side to enclose
Arrange on a large baking sheet, bake for 12 min. Check for doneness, unroll a flap and fish should flake.
Serve with Brown Rice

Grilled Veggies

Fruit Salad

::Ingredients::
2-3 apples,cored & chopped into bite size pieces (peeling on prefered, but optional)
2-3 oranges peeled, segmented and chopped into bite size pieces
1/2 lb strawberries, tops removed and halved or quartered
optional fruit: blueberries, grapes, bananas

::Directions::

1. Combine all fruit into one bowl, toss and refrigerate for 30 min- 1 hour.
2. Serve with low fat vanilla Greek yogurt if desired.

Potato Salad

::Ingredients::
6-8 med potatoes
6 eggs (optional)
6-8 pickle spears
1/4 cup onion, diced
mayo
mustard
pickle juice
salt (to taste)
pepper (optional)

::Directions::
1. Boil potatoes until fork tender
Boil eggs 8-10 minutes
2. Peel & chop eggs and potatoes
3. Finely dice pickle and onion, add to potatoes & eggs
4. Add desired amount of mayo, mustard, & pickle juice until desired consistency is reached. (some like more mayo, others more mustard, others like it thicker, & so forth)
5. Salt & pepper to taste
6. Refrigerate at least 30 min-1 hour before serving.

Crock Pot Ribs

::Ingredients::
Ribs
BBQ Sauce


::Directions::

1. Cut meat into manageable pieces
2. Coat the bottom of the crock pot with BBQ sauce
3. Add ribs, and cover with remaining BBQ sauce
(you may need to use 2 bottles if using 2 -2 1/2 pounds of ribs)
4. Cover and cook on low for 7-8 hours

Crock Pot Chicken & Veggies

::Ingredients::
potatoes
carrots
mushrooms
celery
whole chicken
salt
pepper
lemon pepper


::Directions::

1. Thinly slice potatoes, carrots, mushrooms, & celery and layer the bottom of the crock.
2. Completely cover with water.
3. Place whole chicken, with the "guts" removed first into the crock pot, breasts up, on top of the veggies.
4. Season the bird as you wish, salt, peper, lemon pepper, whatever you want.

Teriyaki Tilapia

::Ingredients::

4 servings
4 tilapia fillets, 6-8 oz each
1/2 cup low sodium soy sauce
2 tsp ground ginger
1/2 tsp olive oil
1 tsp worcestershire sauce
2 TBSP green onions chopped
2 medium garlic cloves minced
non stick cooking spray
::Directions::
1. Rinse fillets and pat dry.
2. Combine soy sauce, worcestershire sauce, ginger, oil, onions & garlic in sauce pan.
3. Bring to a boil; reduce heat & simmer slowly for 5 minutes.
4. Place the fish fillets in a shallow dish and pour marinade over top, cover and chill for 15 min
5. Spray broiler pan with non stick cooking spray. Place under broiler 4-5 inches from heat & cook 8 minutes per inch of thickness. Turn over halfway through total cook time. Garnish with additional chopped green onion slices.

Buffalo Chicken Salad

::Ingredients::

4 servings
2 Tbsp hot sauce
2 tsp paprkia
1 1/4 lb chicken tenders
non stick cooking spray
1/2 cup light mayo
1/2 cup crumbled blue cheese
1 tsp white ving.
6 cups mixed greens lettuce
1 cup shredded carrots
1 cup chopped celery
1/2 cup thinly sliced red onion


::Directions::
1. Mix together the hot sauce & paprika in a large bowl; add the chicken tenders & toss to coat.
2. Coat a grill pan with cooking spray. Add chicken tenders & cook over med-high heat 4 minutes per side or until cooked thoroughly.
3. Whisk together the mayo, blue cheese & ving. in a serving bowl. Add the lettuce, carrots, celery & onions. Toss to combine; layer chicken tenders on top and serve.

Rosemary Steaks

Ingredients
1/4 cup chopped fresh rosemary
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 cloves garlic, minced
1/3 teaspoon crushed red pepper
4 (4-ounce) Ribeye Steaks
1 tablespoon fresh lemon juice
1 teaspoon olive oil
Rosemary butter (optional)



Directions
1. Combine first 5 ingredients in small bowl. Brush steaks with lemon juice and olive oil; rub with rosemary mixture. Cover and chill 1 hour, if desired.
2. Grill steaks, covered with grill lids, over medium-high heat (350°to 400°) about 8 to 10 minutes on each side, or until desired degree of doneness. Serve with Rosemary Butter, if desired.


Makes 4 servings.

Cooking Tip: For the rosemary butter, stir 3 tablespoons chopped fresh rosemary into 1/2 cup softened butter; cover and chill 8 hours. Serve on steaks and steamed vegetables.

Broiling Directions Place steak on a rack of a broiler pan. Broil 3 to 5 inches from heat 6 to 8 minutes on each side or until desired degree of doneness.

Beef & Potato Bake

Ingredients
1 1/2 pound Beef Sirloin Steak, 1 1/4-inches thick
1 teaspoon olive oil
3 all-purpose potatoes, each cut into 6 lengthwise
3 garlic cloves, crushed
2 teaspoons dried oregano
1/2 teaspoon lemon-pepper

Directions
1. Combine steak seasoning ingredients; press into both sides of steak.
2. In medium bowl, combine oil and 1/2 teaspoon lemon pepper. Add potatoes; toss to coat.
3. Place steak on one side of rack in broiler pan so surface of meat is 3 to 4 inches from heat; arrange potatoes on the other side. Broil 18 to 20 minutes until steak is rare to medium doneness and potatoes are tender, turning steak and potato wedges once.
4. Carve steak crosswise into slices and serve with potatoes.

Makes 6 servings.

Cooking Tip: There are many types of potatoes. Feel free to experiment with russets, Yukon Golds or purple potatoes.

Beef Kabobs, Fajita Style

Ingredients
1/2 cup fresh lime juice
2 cloves garlic, minced
1/4 teaspoon ground oregano
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon kosher salt
1/4 teaspoon red pepper
1 1/4 pounds Flank Steak, cut in 1-inch pieces
1 red pepper, cut into 1-inch pieces
1 yellow pepper, cut into 1 inch pieces
1 green pepper, cut into 1-inch pieces
1 purple onion, cut into 1-inch pieces

Directions
1. Combine lime juice and next 6 ingredients in a small bowl.
2. Thread steak, bell peppers and onion alternately on 4 (12-inch) skewers. Pour lime juice mixture over skewers and marinate in the refrigerator 2 hours.
3. Spray grill with cooking spray. Place skewers on grill; cover with grill lid, and cook, turning occasionally, 5 to 7 minutes on each side or until desired degree of doneness.


Makes 4 to 6 servings.

Beef & Spinach burritos

Ingredients
1 pound 92% Lean Ground Beef or 96% Lean Ground Round
1/2 small onion, finely chopped
2 tablespoons taco seasoning mix
1 (10-ounce) package frozen spinach, thawed and squeezed dry
1 (15-ounce) can low-salt black beans, rinsed and drained
1/4 cup salsa
8 (8-inch) fat-free tortillas
3/4 cup 2% Mexican shredded cheese blend
Sour cream, salsa, chopped tomatoes and chopped cilantro (optional)



Directions
1. Cook beef and onion in a large nonstick skillet over medium-high heat 5 minutes or beef is browned and onion is tender; drain.
2. Stir in seasoning mix and cook 2 more minutes. Stir in spinach, black beans and salsa and cook 5 minutes or until thoroughly heated.
3. Spoon about 1/4 cup beef mixture evenly down center of each tortilla; sprinkle evenly with cheese. Roll up tortillas and top with sour cream, salsa, tomatoes and cilantro, if desired.



Makes 6 to 8 servings.

Cooking Tip: The easiest way to thaw frozen spinach is in the microwave. Place spinach on a microwave-safe dish and cover with vented plastic wrap. Thaw several minutes on high. Break up center with a fork, then drain spinach by pressing out excess moisture.

Garlic clove chicken

4 small boneless skinless chicken breast halves (1 lb.)
20 cloves garlic, peeled
3/4 cup fat-free reduced-sodium chicken broth
1/4 cup Light Classic Caesar Dressing
1/4 cup Grated Parmesan Cheese

HEAT large nonstick skillet on medium-high heat. Add chicken and garlic; cook 4 min., turning chicken after 2 min.

STIR in broth and dressing; cover skillet with lid. Cook chicken 3 to 5 min. on each side or until done (165ºF).

SPRINKLE with Parmesan; cover. Remove from heat. Let stand 1 min.
Serving Suggestion; Serve with roasted vegetables and whole wheat rolls.

Purchasing and Storing Garlic; Look for heads of garlic that are both large and plump with dry skins. Store in a cool dark place, such as on a pantry shelf, for up to 8 weeks

Zesty Shrimp & Pasta

1/2 lb. linguine, uncooked 3/4 cup
Zesty Italian Dressing Fat Free, divided
2 cups sliced fresh mushrooms
1 small onion, thinly sliced
1 can (14 oz.) artichoke hearts, drained, quartered
1 lb. uncooked cleaned large shrimp
1 Tbsp. chopped fresh parsley
1/4 cup Grated Parmesan Cheese

COOK pasta as directed on package.

MEANWHILE, heat 1/2 cup dressing in large skillet on medium heat. Stir in mushrooms, onions and artichokes; cook 3 min. or until onions are crisp-tender, stirring occasionally. Add shrimp and parsley; stir. Cook 2 min. or until shrimp are pink and vegetables are tender, stirring occasionally.

DRAIN pasta; return to pot. Add shrimp mixture and remaining dressing; toss lightly. Sprinkle with cheese.

4 salmon fillets (1 lb.)
2 cups chopped fresh spinach leaves
1 cup sliced fresh mushrooms
1 tomato, chopped
1/3 cup Sun-Dried Tomato Dressing

HEAT oven to 375°F.

PLACE fish fillets, skin-sides down, in 13x9-inch baking dish sprayed with cooking spray.

COMBINE remaining ingredients; spoon over fish.

BAKE 20 to 25 min. or until fish flakes easily with fork.

Serving Suggestion; Serve with hot cooked rice to round out the meal.

2 cups multi-grain penne pasta, uncooked
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1-1/4 cups Thick 'N Chunky Salsa
1 cup frozen corn, thawed
1 large green pepper, cut into short thin strips
1 cup Mexican Style 2% Milk Finely Shredded Four Cheese

COOK pasta as directed on package.

MEANWHILE, heat large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cook and stir 2 min. Stir in salsa, corn and peppers. Bring to boil. Simmer on medium-low heat 10 min. or until chicken is done, stirring occasionally.

DRAIN pasta. Add to chicken mixture; mix lightly. Top with cheese. Remove from heat; cover. Let stand 1 min. or until cheese is melted.

Extra; Garnish each serving with 1 Tbsp. chopped cilantro or chopped green onions.

Chicken Parmesan Bundles

4 oz. (1/2 of 8-oz. pkg.)Neufchatel Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups Shredded 2% Milk Mozzarella Cheese, divided
6 Tbsp.Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 RITZ stlye, Reduced fat Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated

HEAT oven to 375ºF.

MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.

BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.

Make Ahead; Assemble chicken bundles and place in baking dish as directed. Refrigerate up to 4 hours. When ready to serve, uncover and bake at 375ºF for 35 min. or until chicken is done.

Special Extra; Stir chopped fresh basil and/or sliced black olives into spaghetti sauce before heating.

Don't forget for those of you who frequent Publix, if you spend $10.00 or more in groceries, you get the item of the week for a PENNY! The only way to know what the item of the week is would be to actually visit your local Publix. It is always a Publix brand item, but it varies from a loaf of bread, to salad dressing, to a bottle of bleach, to a pack of toilet paper.
They also take competetors coupons, so you can stack them with manufacturers, plus they double coupons up to $0.50 everyday! YAY!!!

The ones from ALDI are listed as a comment under the shopping list for Aldi this week.
FOOD LION:
Their deli sliced chicken was on sale for $4.88/lb, I got 1/2 lb so it was $2.44
Their deli sliced honey ham was on sale for $3.88/lb, I got 1/2 lb so it was 1.94
If you check out the prices of most pre-packaged lunch meat you'll find this fresh sliced is cheaper!
Classico Pasta sauce on sale 2/$4, plus I had a coupon $1.50/2, so I got them for $1.25 each
I also had a coupon, buy 2 Classico pasta sauces, get $1.50 off fresh beef product...
I bought a pound of 7% fat ground chuck, reg. $3.39/lb, I got for $1.89
The Birds eye steamfresh veggies were on sale for 10/$10, I bought 1 bag and used a $0.50/1 coupon from this weeks paper and got it for $0.50. **this would have been a better deal at Kroger if they had the same sale because they double coupons up to $0.50/daily!**
Digorno frozen pizzas were on sale 2/$6, I had a coupon for $1/1, so I got them for $2.50 each

All in all, I used a coupon for everything I bought or it was at least on sale. I spent $27.66 tax and all and saved $20.47!!!

KROGER:
They have their Pure Protein bars on sale for 10/$10, use the coupon form the paper and BOGO FREE!, That's $0.50 each.
They have Kraft natural shredded cheese on sale 2/$4, plus at the Dickson Kroger they have a coupon machine right there spitting out a coupon for $1/2. That comes to $1.50 per pack.
They have Silk Soy milk on sale 2/$5 and again they have a coupon machine at the Dickson store that spits out a coupon $0.55/1, that's $1.95 for 1. Normally it is $2.99.
Always remember to check for marked down fresh items! Today I got Laura's Lean ground beef $2.88/lb. Normally it is $5.99. There is nothing wrong with it, except it needs to be cooked or frozen by today!
Also check the produce dept for deals on salads or pre-cut fruit!
Vitamin Water is on sale 10/$10, plus there is a coupon in the paper $1/2. It's like getting them for $0.50 each!
Also remember that Kroger doubles coupons up to $0.50 daily and you get gas points for spending at least $100.00 in groceries and for using reuseable bags! Plus Shell has teamed up with Kroger to also offer $0.10 off a gallon. Hopefully this will be true for the diesel as well at Shell! For any of you diesel drivers! My husband included.

Pork & Apple Toss

::Ingredients::
2 tsp olive oil
1 small garlic clove crushed
6-8 oz of thinly sliced pork tenderloin
1 small red apple cored and diced
2 tsp balsamic or red wine vinegar
1 Tbsp mustard
salt and pepper to taste

::Directions::
1. Combine oil and garlic in skillet on med-high heat
2. Add pork to center of skillet
3. Toss apple with vinegar and add to the outter skillet around the pork
cook until pork is done tossing the apples often
4. When ready, top pork with mustard, season to taste

Grilled Corn On The Cob

::Ingredients::
Entire ear of corn

::Directions::
1. Soak the entire ear of corn with shucks on in water for about 30 min.
2. Pull the shucks back just far enough to remove the silks
3. Season your corn with butter and sprinkle with salt & pepper
4. Pull the shucks back up as best you can to cover the corn, and grill until the shucks are brown and crisp.
5. Remove and enjoy your corn!
